Our story

Baobei means “treasure.” So does a good loaf.

I'm Yanni Zhang. Baobei Bakes started the way most sourdough stories do — a jar of flour and water on the counter that I refused to give up on. It bubbled, it sulked, it eventually rose. Years later that same starter still gets fed every morning before I do anything else.

Baobei is what my family calls the people they love. It felt right for bread that gets this much attention: hand-mixed in small batches, folded through the afternoon, rested cold overnight, scored and baked at dawn.

No commercial yeast, no conditioners, no shortcuts. Just flour, water, salt, and a starter with a very long memory.
